I would like someone to give me the recipe for some Xmas Duck Roast. In the mean time, I am providing you with an easy recipe for a special Xmas cucumber salad.
You will need: Big Cucumber (1), Grated coconut (1), Green Chillies (4), Pepper powder (1/2 tsp), Vinegar to taste, Salt to taste.
To make: Extract thick milk from the grated coconut by adding little hot water. Peel the skin of the cucumber. Slice into fine layers and cut it lengthwise. Add salt and squeeze the cucumber. Add the remaining ingredients and coconut milk.

Nayana Nagpal For duck roast, you will need: Duck (1 kg), Cinnamon (3, 1' inch pieces), Clove (4), Pepper (1 tsp), Turmeric powder (a pinch), Water (2 glass), Ghee (2 tbs), Oil (2 tbs), Tomatoes (2), Potatoes (1 or 2), Ladies Finger (a few).
To make: Grind clove, cinnamon, pepper, turmeric powder and salt. Clean the duck. Marinate the duck both inside and outside with the ground masala for 1/2 an hour. Fry the duck in a pan in ghee and oil. Turn over the duck and fry till light brown. Boil water and pour it over the duck. Close the pan with a lid and cook till done. There should be enough gravy. Fry the ladies finger and sliced potatoes in oil adding salt and a little gravy from the duck curry. Slice tomatoes breadth wise. Decorate the duck roast with the fried ladies finger, potatoes and tomatoes.

Baking soda (2 tsp), Whole wheat flour (1 cup), All-purpose flour (1 cup), Crushed pineapple (1 cup), Shredded carrots (2 cups),
Chopped walnuts (1/2 cup), Raisins (1/2 cup).
To make: In large mixing bowl, beat egg whites. Slowly beat in sugar, then skin milk, and vanilla. Stir in with a spoon the dry ingredients, (clove, nutmeg, cinnamon, baking soda, flour), in order given. Stir in, one ingredient at a time, pineapple, carrots, walnuts, and raisins. Pour into lightly greased (use non-fat cooking spray) pan. Bake in preheated 350 o F. Over for 35-40 minutes. It is done when toothpick inserted in center comes out clean.

Trishna Ghatge For Christmas rice, you need Skin less fish pieces (250 gm), Shelled shrimps (200 gm), Egg (2), Half cooked basmati rice (2 cup), Onions (chopped) - 2 medium size, Garam masala powder (2 tsp), Fresh green peas (100 gm), Oil (3 tbsp), Green chilies (6-7 slitted), Salt to taste.
To make: Heat the oil in pressure cooker, fry the chopped onions adding salt, shrimps, fish pieces and green peas into it. Add egg to it. Fry it on slow flame and slowly add the rice and the slitted chilies. Pressure cook it with 1 cup of water as the rice is half boiled adding garam masala powder in it. Wait for a whistle and its ready to it. Simmer it for 5-10 minutes and its ready to serve.

Here's the recipe for a yummy Xmas apple caramel: You will need Corn flour (1 tbs), Milk (1 cup), Peeled & grated apple (2), Lemon juice (few drops), Eggs (2), Sugar (2 tbs), Orange marmalade (1 tbs), Marie biscuits (2), Shelled & Sliced Walnuts (100 gms), Sliced Cherries (50 gm), Cocoa powder, dissolved in a little water (1 tbs).
Mix cornflour with milk to a smooth paste and bring to a boil. Keep aside. Add lemon juice to the apples. Stir over low heat for about 10 minutes. Keep aside. Beat the eggs with sugar, marmalade and Marie biscuits. Mix walnuts and cherries, reserving a little for later use. Mix the apples, egg-biscuit mixture and walnut-cherry mixture together. Divide it into two portions. Pour one portion into a caramelised pan and steam for 10 minutes. Add cocoa mixture to the remaining portion and pour it gently over the steamed pudding. Steam for 15 minutes more or till done. Invert the dessert onto a serving dish. Decorate with the cherries and walnut kept aside. Serve chilled.
